Cooking Steps

Krieltjes bereiden

  • Halveer eventuele grote krieltjes en laat de rest heel.
  • Zorg dat de krieltjes net onder water staan in een pan en verkruimel het bouillonblokje boven de pan. Breng aan de kook en kook de krieltjes in 15 - 17 minuten gaar. Giet daarna af.
Varkensoester bakken

  • Wrijf de varkensoester in met peper. Verhit de helft van de roomboter in een koekenpan op middelhoog vuur.
  • Bak de varkensoester in 5 - 7 minuten per kant rondom bruin. Keer regelmatig om.
  • Haal daarna uit de pan en verpak in aluminiumfolie. Laat rusten tot serveren.
Snijden

  • Bak de krieltjes 2 minuten op middelhoog vuur in het bakvet van de varkensoester.
  • Snijd de radijsjes in kwarten. Snijd de komkommer in dunne plakken. Snijd de nectarine in partjes.
  • Verhit de overige roomboter in een andere koekenpan op middelhoog vuur en bak de nectarine 1 - 2 minuten per kant (zie Tip).

Tip: Voeg eventueel extra roomboter toe en bak de nectarine niet te lang.

Serveren

  • Meng in een saladekom de mosterd, honing, wittewijnazijn, extra vierge olijfolie en peper tot een dressing.
  • Voeg de sla, komkommer en radijs toe aan de saladekom en meng goed. Breng op smaak met peper.
  • Verdeel de salade, krieltjes en varkensoester over de borden. Serveer met de nectarine.
