  • Peel the mango and finely chop the flesh. Set 2 tbsp of cut mango aside for garnish.

  • Cut 2 passion fruit in half and scoop out the flesh.

  • Peel the banana and cut in thirds. Leave 4 mint leaves on the side, chop the rest of the mint finely.

  • Put the fruit and mint in a blender (or a tall container if you're using an immersion blender), then blend into a creamy puree.

  • Heat a frying pan over medium-high heat. Toast the desiccated coconut and chopped cashews for 2-4 minutes or until golden brown.*
  • Cut the third passionfruit in half.

*Use two separate pans for this step, if preferred.

  • Serve the fruit puree in bowls. Top with half a passionfruit per bowl, the toasted coconut and cashews, mango pieces, mint leaves and the chia seeds.
