Breng ruim water aan de kook in een pan met deksel voor de penne. Snijd de prei in dunne ringen en de ui in dunne halve maantjes. Pers de knoflook of snijd fijn.

Kook de penne, afgedekt, in 14 - 16 minuten gaar. Giet daarna af en laat zonder deksel uitstomen.

Halveer de kipgehaktballetjes, zodat je 6 balletjes per persoon hebt. Rol ze tot ze rond worden. Verhit 1/2 el olijfolie per persoon in een koekenpan op middelhoog vuur en bak de kipgehaktballetjes in 8-10 minuten goudbruin. Haal daarna uit de pan. Bewaar het bakvocht.

Verhit ondertussen 1/2 el olijfolie in een hapjespan met deksel op middelhoog vuur. Voeg de knoflook, ui, prei en 2 el water per persoon toe. Laat, afgedekt, 8-10 minuten zachtjes stoven. Snijd ondertussen de bieslook en de semi-gedroogde tomaten fijn. Rasp een mestpuntje nootmuskaat per persoon.

Voeg de slagroom, oude kaas, semi-gedroogde tomaten toe aan de prei. Voeg naar smaak nootmuskaat toe. Voeg tenslotte ook de kipgehakballetjes bij de prei in de pan, meng alles goed en verwarm nog 2-3 minuten. Breng op smaak met peper en zout.

Meng de penne door de saus in de pan en verdeel vervolgens over de borden. Garneer met de bieslook.
