Japanse noedelsoep, ook wel ramen, is makkelijk te maken en supersmaakvol. Het is een lichte soep waar je een heleboel groenten in kwijt kunt. Vandaag maak je de soep met gemarineerde kipfiletreepjes. Wil je het gerecht nog meer pit geven? Bak dan wat zaadjes van de rode peper mee.

Bouillon bereiden

Bereid de kippenbouillon.

Snijden

Schil de gember en snijd of rasp de gember fijn. Verwijder de zaadlijsten van de rode peper en snijd de rode peper fijn. Snijd de kastanjechampignons in plakken. Verwijder de steelaanzet van de paksoi en snijd de paksoi grof.

Bakken

Verhit de zonnebloemolie in een wok of soeppan met deksel en fruit de gember en de rode peper 2 – 3 minuten op middellaag vuur. Voeg de kipfiletreepjes toe en bak 2 minuten op middelhoog vuur. Voeg de kastanjechampignons en de paksoi toe en bak nog 2 minuten.

Soep koken

Voeg de bouillon toe aan de wok of soeppan en laat 6 minuten, afgedekt, zachtjes koken. Voeg na 3 minuten de udonnoedels toe.

Op smaak brengen

Voeg 1 tl sojasaus per persoon toe aan de soep en breng verder op smaak met peper en eventueel extra sojasaus.

Serveren

Verdeel de soep over de soepkommen.
