Cooking Steps

Cuire les pommes de terre

Préparez le bouillon. Épluchez ou lavez bien les pommes de terre et taillez-les en rondelles de 1/2 cm d’épaisseur. Faites chauffer la moitié de l’huile d’olive dans la sauteuse et cuire les pommes de terre 15 à 20 minutes à feu moyen-vif à couvert. Retirez le couvercle lors des 5 dernières minutes. Salez et poivrez.

Pendant ce temps, taillez le poireau en fines demi-rondelles. Écrasez ou émincez l’ail. Émincez l’échalote. Détachez les aiguilles de romarin des brins et ciselez-les grossièrement. Faites chauffer la moitié du beurre dans la poêle à feu moyen-vif et cuire le filet de poulet 2 à 3 minutes de chaque côté. Réservez-le hors de la poêle : il ne doit pas être encore cuit à ce stade. Pendant ce temps, coupez les bouquets de brocoli en fleurettes et les tiges en dés.

Faites chauffer le reste du beurre dans la même poêle et revenir l’échalote 1 à 2 minutes. Ajoutez le poireau et l’ail. Poursuivez la cuisson encore 2 à 3 minutes.

Faites chauffer l'autre moitié d’huile d’olive à feu vif dans la sauteuse et cuire les brocolis 1 à 2 minutes. Arrosez avec 125 ml de bouillon par personne (attention, vous n'utilisez pas tout le bouillon). Baissez le feu sur doux et laissez les brocolis étuver à couvert 10 à 12 minutes. Égouttez-les si nécessaire.

Préparer la sauce à la moutarde

Arrosez le poireau avec 75 ml de bouillon par personne. Ajoutez la moutarde, le vinaigre de vin blanc et le romarin. Baissez le feu, ajoutez la crème liquide et laissez réduire 12 minutes. Ajoutez le poulet lors des 5 dernières minutes pour en terminer la cuisson.

Servez les brocolis et les pommes de terre sur les assiettes, puis le poulet en sauce crémeuse à la moutarde.
