Cooking Steps

  • Zest and juice 2 lemons.
  • Peel and dice the mangoes. 
  • Add the chia seeds to a large bowl, along with the lemon zest, lemon juice, coconut milk, half of the mango, the water (see pantry for amount) and honey to taste. 
  • Mix well and allow to rest for 10 minutes.

  • Use an immersion blender to blend the chia pudding into a smooth purée.
  • Serve in four bowls.

  • Garnish the bowls with the rest of the mango and drizzle extra honey to taste on top.
