Voorbereiden

Verwarm de oven voor op 200 graden. Snijd de wortel in kwarten en daarna in staafjes van 5 cm lang. Was de aardappelen, snijd doormidden en daarna in stukken van 1 cm dik.

Weetje: Wist je dat aardappelen supergezond zijn? Ze zijn rijk aan goede koolhydraten, kalium, vitamine C, B6 en B11 en vezels!

In de oven

Meng in een grote kom de aardappelen en wortel met 1/2 el olijfolie per persoon en breng op smaak met peper en zout. Verdeel over een bakplaat met bakpapier, maar laat wat ruimte over voor de paprika. Bak 25 - 35 minuten, of tot ze goudbruin kleuren. Schep halverwege om. 

Groenten snijden

Snipper ondertussen de ui. Pers de knoflook of snijd fijn. Snijd de verse kruiden fijn en bewaar apart. Snijd de paprika in reepjes. Rooster de paprika de laatste 15 minuten mee in de oven met de wortel en aardappelen.

Burgers bakken

Verhit 1/2 el olijfolie per persoon in een grote koekenpan op middelhoog vuur. Bak de hamburgers, ui, knoflook en tomatentapenade 3 - 4 minuten.

Roomsaus maken

Draai de hamburgers om en voeg 1 1/2 tl Italiaanse kruiden per persoon toe en bak 2 minuten mee, of tot de burgers gaar zijn. Blus af met 1/2 el zwarte balsamicoazijn per persoon. Voeg de kookroom en per persoon: 1/8 groentebouillonblokje en 50 ml water toe en kook nog 5 - 7 minuten op laag vuur (zie Tip).

Gezondheidstip: Deze maaltijd is calorierijk. Let jij op je calorie-inname? Vervang dan 50 ml room per persoon door een gelijke hoeveelheid melk of bouillon. De overige room is lekker in bijvoorbeeld soep.

Serveren

Verdeel de wortel, aardappelen en paprika over borden. Serveer de burgers met de saus ernaast en garneer met de verse kruiden. Serveer met de mayonaise.
