Verwarm de oven voor op 180 graden en bak de ciabatta 6 - 8 minuten.Snijd de pruimtomaat en de tomaat in kleine blokjes.Snipper de helft van de rode ui zeer fijn en snijd de rest in halve ringen.Pers de knoflook of snijd fijn.

Salsa en mayo maken

Meng in een kom de fijngesneden rode ui, de tomatenblokjes, de knoflook, de extra vierge olijfolie en de zwarte balsamicoazijn. Breng op smaak met peper en zout en bewaar apart.Meng in een kleine kom de basilicumcrème met de mayonaise.

Tip: Let jij op je calorie-inname? Gebruik dan de helft van de mayonaise en de helft van de grana padano. Gebruik eventueel ook de helft van de extra vierge olijfolie voor de tomatensalsa.

Hamburger bakken

Verhit de roomboter in een koekenpan op middelhoog vuur en bak de hamburger samen met de rode-uiringen 2 – 3 minuten per kant, of tot de hamburger gaar is.Strooi in de laatste minuut de helft van de grana padano over de burgers.Verhit ondertussen een andere koekenpan, zonder olie, op hoog vuur en rooster de walnootstukjes tot ze beginnen te kleuren. Haal uit de pan en bewaar apart.

Snijd de ciabatta's open en besmeer met de basilicummayonaise.Leg de hamburger erop, bedek met 3 el tomatensalsa per persoon en een beetje van de radicchio, rucola en bladsla.Meng de overige sla met de rest van de tomatensalsa en serveer ernaast.Garneer de salade met de walnootstukjes en de overige grana padano.
