Krieltjes bakken

Verwarm de oven voor op 200 graden. Was de krieltjes en snijd doormidden. Leg de krieltjes in een ovenschaal, meng met de helft van de olijfolie en breng op smaak met peper en zout. Zet de krieltjes in de oven en bak ze in 30 – 35 minuten krokant. Schep halverwege om.

Broccoli koken

Kook ondertussen ruim water in een pan met deksel voor de broccoli. Snijd de bloem van de broccoli in kleine roosjes en de steel in blokjes. Kook de broccoli, afgedekt, in 3 - 4 minuten beetgaar. Giet de broccoli af en spoel onder koud water, zodat hij niet doorgaart.

Snijden en raspen

Verhit een koekenpan op hoog vuur en rooster de cashewstukjes, zonder olie, goudbruin. Haal uit de pan en bewaar apart. Snijd de sjalot fijn, rasp de schil van de citroen met een fijne rasp en snijd de citroen in parten.

Broccoli bakken

Verhit de roomboter in dezelfde koekenpan en fruit de sjalot 2 - 3 minuten op middelhoog vuur. Voeg de broccoli toe en roerbak 5 - 7 minuten op hoog vuur. Meng halverwege 1/2 tl citroenrasp per persoon door de broccoli. Breng op smaak met peper en zout.

Kabeljauwfilet bakken

Dep ondertussen de kabeljauwfilet droog met keukenpapier en wrijf in met peper en zout. Verhit de overige olijfolie in een andere koekenpan op middelhoog vuur. Bak de kabeljauw 2 - 3 minuten per kant, of tot de vis gaar is.

Serveren

Serveer de krieltjes met de kabeljauw en de broccoli. Bestrooi de broccoli met de cashewstukjes en de geraspte Italiaanse kaas en knijp een partje citroen uit over de vis.
