Cooking Steps

  • Preheat the oven to 180° (hot air) or 200° (electric).
  • Cut the sides of the nectarine around the pit. Cut them in thin crescents, but not all the way through. Leave the bottom of the nectarine attached. 
  • In a bowl, mix half of the shaved almonds and half of the powdered sugar with the flour and mix well.

  • Roll open the dough and place on a baking sheet lined with baking paper (see Tip).
  • Spread the almond-sugar mix over the middle.
  • Take the nectarines and softly press down into a ''fan'' shape, then place them on the galette, leaving the edges free.
  • Fold the edges inward.
  • Brush the edges with milk. Distribute the rest of the shaved almonds on top of the edges and a little bit on the nectarines.


Tip: Would you prefer small galettes? Then cut the dough into, say, 2 or 4 equal pieces.

  • Bake the galette for 25 - 30 minutes in the centre of the oven or until golden brown.
  • Meanwhile, zest and juice the lemon.
  • In a bowl, mix the cream cheese with the lemon zest and lemon juice.
  • Add the rest of the powdered sugar, but leave one tablespoon for garnish in the end, and mix together.

  • Let the galette cool down for 5 - 10 minutes.
  • Serve the galette with dollops of cream cheese and garnish with the reserved tablespoon of powdered sugar.
