Cooking Steps

  • Preheat the oven to 220°C.
  • FInely chop the shallot and chives.
  • Use a vegetable peeler to slice 8 thin ribbons off the cucumber. Finely slice the rest.
  • Put the bagel in the oven for 4 minutes.

  • Set aside 1/2 tbsp mayonnaise for the bagel. Put the rest of the mayo in a bowl and mix with the salmon flakes and chives. Season with salt and pepper to taste.
  • In a salad bowl, make a dressing by mixing the extra virgin olive oil with the white wine vinegar, mustard, honey, the rest of the shallot and some salt and pepper to taste.

  • Thinly slice the apple.
  • Cut the bagel open and put some lettuce and slices of apple onto the bottom half, followed by the cucumber ribbons and salmon salad.
  • Spread the mayonnaise onto the top half of the bagel.

  • Mix the rest of the lettuce, apple and cucumber with the dressing.
  • Close the bagel and serve with the salad to the side.
