Cooking Steps

  • Cut the feta, watermelon and cucumber into similar-sized cubes of 2 by 2 cm thickness.
  • Dice the cucumber into very small cubes of 1/2 cm by 1/2 cm thickness.

  • In a tall container mix 2/3 of the fresh basil and the extra vierge olive oil with a blender or an immersion blender.

  • Arrange the feta, cucumber and watermelon cubes onto plates, creating one colourful puzzle per person. (see Tip)

Tip: Do you have watermelon left? Place the watermelon into the freezer and the next day blend it with a drizzle of honey and a squeeze of lime juice for a refreshing summer slushy.

  • Garnish the 'puzzle' with the basil oil, crema di balsamico, small cucumber cubes and the rest of the fresh basil.
  • Season to taste with salt and pepper. (see Tip)
